Ingredients for Tomato Pickle
- Tomatoes - 5 to 7
- Red Chilli Powder - 3 to 4 tblsp
- Turmeric Powder - 1 tsp
- Salt - As Needed
- Peanut Oil - 3 to 4 tblsp
- Tamarind Bulp - 1 tsp
- Mustard Seeds - 1 tsp
- Fenugreek - 3/4 tsp
- Asafoetida - 1/4 tsp
- Curry Leaves
Preparation of Tomato Pickle Recipe
First wash the tomatoes and chop them as fine pieces.
Take a pan and dry roast the fenugreek seeds till the raw aroma goes off.
Grind the roasted fenugreek seed to fine powder.
Take another pan and heat 2 tblsp of peanut oil.
Add mustard seeds. When they starts to splutter add the curry leaves and asafoetida. Wait for 2 to 3 seconds.
Now add the finely chopped tomatoes and saute them for 3 to 4 minutes in low flame.
Then add the tamarind pulp and saute them well until the tomatoes cooks well and smash completely.
Now add the red chilli powder, turmeric powder and salt. Mix them well and cook them.
Cook them patiently until oil starts separating from tomatoes mixture.
Finally add the fenugreek powder and transfer to a clean jar or container.
Spicy and tasty Andhra special, "Tomato Pickle" is ready.
Tips - Tomato Pickle
Add a small piece of Jaggery for a more taste.
If you wish add 1/2 tsp of mustard seeds while frying the fenugreek seeds.
