Ingredients for Spinach Enchiladas
- Spinach - 8 Ounce (1 Cup)
- Corn tortillas - 10
- Onion - 1/2 Cup
- Garlic - 2
- Ricotta Cheese - 1 Cup
- Green Chili - 5 to 6
- Pepitas - 1/4 Cup
- Shredded Cheddar Cheese - 1/2 Cup
- Black Pepper - 1/4 tsp
- Monterey Jack Cheese - 1/2 Cup
- Lime Juice - 2 tblsp
- Enchilada Sauce - 1 Cup
- Olive Oil
- Kosher Salt
Preparation of Spinach Enchiladas Recipe
Preheat the oven at 400 degree F.
Heat 1 tblsp of oil and add chopped garlic. Saute them well.
Now, add the chopped onions and green chillies. Mix and saute them again.
Add the spinach and cook for 5 to 7 minutes.
Add pepitas, black pepper powder and salt. Mix it again for some more minute.
Warm the tortillas for 30 seconds one at a time.
Place some spinach mixture over the tortillas. Repeat this for all tortillas.
Place all the tortillas on greased baking pan.
First spread some enchilada sauce over the arranged tortillas.
Now, grade the 2 type of cheese over the tortilla mixture. Cheese should fully cover casserole dish.
Bake at 400°F for 15 to 20 minutes. The cheese should get melts and is bubbly.
Remove from oven and wait for 10 minutes.
A mouth melting tasty Mexican "Spinach Enchiladas" is ready.

We can add corn kernels, cabbages etc., for more taste.
