Ingredients for Schezwan Chilli Potatoes Recipe
- Potatoes – 3
- Corn Floor - 3 to 4 tsp
- Pepper Powder - 2 tsp
- Onions – 2 Nos (Finely chopped)
- Green chillies – 4 to 5
- Red chillies – 3 to 4
- Garlic - 1 tsp (Finely Chopped)
- Ginger - 1 tsp (Finely Chopped)
- Schezwan Pepper - (2 tsp) Crushed
- Black Pepper - 1 tsp
- Soya Sauce - 1 tsp
- Red Chilli Sauce - 1 tsp
- Tomato Sauce - 2 tsp
- Celery - 1 to 2 tsp (Finely Chopped)
- Spring Onions - 1 to 2 tsp (Finely Chopped)
- Sugar - 1 Pinch
- Oil and Salt - Needed
Preparation of Schezwan Chilli Potatoes
Peel and Cut the Potatoes in some bigger size and put in cold water for 1/2 hour.
Drain the potatoes and add 1 tsp of corn floor, salt, pepper, water and mix well.
Now shallow fry the potatoes and keep it aside.
Take another kadai and heat 1 tsp of oil.
Add Chopped onions and saute them till it turn golden brown.
Add vertically chopped green chillies, vertically chopped red chillies, finely copped ginger and garlic and stir them for 2 minutes.
Now, add the crushed schezwan pepper and black pepper saute them till the raw smell reduces.
Then, add all the sauces one by one (Soya sauce, Red Chilli sauce, Tomato sauce).
Add small amount of water or vegetable starch and stir them well till it becomes thick.
Add a pinch of sugar, 1 tsp of celery, salt as needed and corn starch (or Corn floor mixed in water).
Stir them till it gets sauce consistency.
Now, add the fried potatoes and chopped spring onions and mix them well so that the sauce gets into the fried potatoes.
