Ingredients for Quinoa Stuffed Peppers
- Quinoa / Thinnai - 1 Cup
- Bell Peppers / Capsicum - 5
- Eggplant - 1
- Tomato - 1
- Tomato Sauce - 1 Cup
- Onion - 1
- Garlic Cloves - 2
- Zucchini - 1
- Mozzarella Cheese - 1 Cup
- Ground Black Pepper
- Olive Oil
Preparation of Quinoa Stuffed Peppers Recipe
Preheat oven to 350 degree F.
Take sauce pan. Add water and quinoa. Let it boil for 15 to 20 minutes in low flame.
Cook the quinoa until the water is absorbed completely and quinoa becomes soft.
Take another pan and heat olive oil.
Add chopped onion and garlic. Saute them for 5 minutes.
Now add zucchini, chopped eggplant and tomato. Stir them for 3 to 5 minutes.
Add tomato sauce and stir them. Cook them for 10 minutes until the vegetables become soft.
Add the cooked quinoa into the vegetable mixture, salt and pepper powder. Stir them for 2 to 4 minutes and turn off the flame.
Wash the bell peppers. Cut off the top of the bell peppers and remove the seeds.
Fill the bell peppers with the vegetable and quinoa mixture.
Take a deep baking dish and line up with aluminum foil.
Arrange the stuffed bell peppers in the baking pan and cover with aluminum foil again.
Bake them for 18 to 20 minutes. Then remove the aluminum foil cover.
Sprinkle some ground pepper and mozzarella cheese and bake them again for 5 minutes until the cheese melts and bubbling.

Instead of cut of the top of the bell peppers we can even cut them into half.
