Ingredients for Olan
- Red Beans - 1/2 Cup
- Ash gourd - 2 Cup
- Thin Coconut Milk – 1 cup
- Thick Coconut Milk – 1/2 cup
- Musturd Seeds
- Shallots - 4
- Curry Leaves
- Green Chillies - 4
- Coconut Oil
Preparation of Olan Recipe
Wash and soak the red beans overnight.
Drain the beans and pressure cook them with a cup of water and salt for 2 to 3 whistles.
Now peal the ash gourd and cut them into cubes.
Take a pan and add 1/2 cup water and 1 cup thin coconut milk.
Add chopped ash gourd and green chillies. Add salt to taste.
Let the ash gourd cook well.
Then add cooked red beans and cook for another 5 minutes.
Add the thick coconut milk. Turn the flame to low and let them cook for 5 minutes.
Take another pan and add coconut oil. Add mustard seeds, chopped shallots and curry leaves. Saute them for 3 to 4 minutes and turn off the flame.
Add the tempering to ash gourd mixture and cover them and turn off the flame.
Transfer to serving bowl.
Traditional onam special, Olan recipe is ready.
Tips - Olan
Do not over cook the vegetables it should retain its shape.
