Ingredients for Mexican Rice
- Rice - 1 and 1/2 Cup
- Onion - 1/2 Cup
- Bell Pepper - 1/2 Cup
- Garlic - 1
- Tomatoes Sauce- 1/2 Cup
- Green Chillies - 2
- Vegetable Broth - 1 and 1/2 Cup
- Chili Powder - 1 tsp
- Cumin - 1/2 tsp
- Black Pepper Powder
- Cilantro Leaves
Preparation of Mexican Rice Recipe
Take a large vessel / skillet. Heat olive oil or butter.
Add chopped onions, bell pepper, green chilies and garlic. Saute them well until the onion becomes translucent.
Then add rice, stir them for 2 to 3 minutes.
Add tomato sauce and vegetable broth. Mix them well for 2 to 3 minutes in low flame.
Add the chili powder, cumin, black pepper powder and salt. Saute them well.
Finally add water and bring it to boil for 15 to 17 minutes.
Once the rice got cooked well turn off the flame.
Transfer to a serving plate and garnish with cilantro leaves.
Mexican special "Mexican Rice" is ready for serving.
Tips - Mexican Rice Recipe
We can add vegetables like corn kernels, carrots, green peas etc., .
Even we can add boiled chicken for Mexican chicken rice.
