Ingredients for Mexican Bean Salad

  • Black Beans - 2 Cups
  • Pinto Beans - 2 Cups
  • Garbanzo Beans - 2 Cups
  • Onion - 1
  • Red Capsicum (Pepper) - 1
  • Fresh Cilantro - 1/4 Cup
  • Corn - 1 Cup
  • Olive Oil - 1/2 Cup
  • Red Wine Vinegar - 2 tblsp
  • Lime Juice -2 tblsp
  • Garlic - 1/2 tsp
  • Sugar - 2 tsp
  • Kosher Salt - 1 tsp
  • Cumin - 1 tsp
  • Fresh Ground Pepper - 1 tsp
  • Tabasco Sauce - 1 tsp
  • Chili Powder - 1 tsp
  • Avocado - 1

Preparation of Mexican Bean Salad Recipe

First wash and drain all the beans.

In a large bowl, add the black bean, pinto bean, garbanzo beans finely chopped onion, red capsicum, cilantro and corn.

Take another bowl, add red wine vinegar, lime juice, garlic, cumin, olive oil, kosher salt, ground pepper, tobasco sauce and sugar.

Whisk all the ingredients together.

Pour the mixed dressing over the beans mixture.

Sprinkle a dash of chili powder over the salad.

Cover the salad and allow it to chill.

While serving add the chopped avocados.
