Coriander Rice

We are going to make a easy and healthy one pot rice recipe with coriander, "Coriander Rice". Its a perfect lunch box for kids also we can add any vegetables you wish to make it more healthy and tasty.

Ingredients for Coriander Rice

  • Basmati Rice - 1 Cup
  • Onion - 1
  • Cashews - 2 tblsp (Chopped)
  • Coriander Powder - 1 tsp
  • Red Chilli Powder - 1/2 tsp
  • Turmeric Powder - A Pinch
  • Garam Masala Powder - 1/2 tsp
  • Green Peas - 1/3 Cup
  • Potatoes - 1
  • Coriander Leaves - 1/2 Cup
  • Green Chillies - 2
  • Ginger - 1/2 Inch
  • Garlic - 3 to 4
  • Cumin Seeds- 1/2 tsp
  • Fennel Seeds - 1/2 tsp
  • Salt - As Required
  • Sugar - 1/4 tsp
  • Oil or Butter
  • Bay Leaf - 1
  • Cloves - 3 to 4
  • Green Cardamom - 2 to 3
  • Cinnamon - 1 Inch

Preparation of Coriander Rice Recipe

First wash the coriander leaves and add it to a blender.

Add green chillies, ginger, garlic, cumin seeds, fennel seeds and little water. Grind them as smooth paste.

Heat 2 tsp of oil in a a pressure cooker.

Add bay leaf, cinnamon stick, cloves, green cardamom and cashews. Fry them until the aroma comes out.

Then add the onion paste and saute them for 3 to 5 minutes.

Now add the coriander paste. Saute them until the raw smell goes off.

Now add all the dry powders(coriander powder, red chilli powder, turmeric powder, garam masala powder and salt).

Then add the boiled green peas and potatoes. Mix them and saute them for 2 minutes.

Add rice and stir them for a minute.

Now add 1 and 1/2 cup water and stir them again.

Cover and pressure cook for 2 whistle.

Finally transfer to a serving plate and garnish with fried cashews.

Healthy lunch box special, "Coriander Rice" is ready.

Tips - Coriander Rice

We can add garnish with other dry fruits like dry grapes, walnuts, etc.,.

Add any vegetables like cauliflower, capsicum, etc,. as you wish.
