Ingredients for Coconut Rice
- Rice - 1 Cup
- Grated Coconut - 1 Cup
- Musturd Seeds
- Urad Dal- 1 tblsp
- Chana Dal - 1 tblsp
- Curry Leaves
- Dry Red chilly - 1
- Green Chillies - 2 to 3
- Cashews - 2 tblsp
- Coconut Oil
Preparation of Coconut Rice Recipe
Wash and soak the rice for 30 to 60 minutes.
Drain the rice and pressure cook the rice with 2 cups of water for 2 to 3 whistles.
Soak the chana dal and urad dal for 30 minutes.
Take a pan and heat a tblsp of oil.
Add mustard seeds and let it fry for 30 seconds.
Now add the chana and urad dal. Saute them for few seconds.
Add dry red chilly, curry leaves, cashews and chopped green chillies. Saute them for 2 minutes.
Add the grated coconut and saute them for 4 to 5 minutes.
Them add cooked rice with salt. Stir them and turn off the flame.
Transfer to serving plate.
An easy and simple lunch box special, Coconut Rice is ready.
Tips - Coconut Rice
We can add ghee instead of oil for more flavour.
Serve the rice with potato fry or any spicy gravy.
