Ingredients for Panjiri
- Wheat Flour - 1 Cup
- Sugar - 1/2 Cup
- Ghee - 4 to 5 tblsp
- Cashews and Dry grapes
Preparation of Panjiri Recipe
First grind the sugar to make a fine dry powder and keep it aside.
Take a pan and add a tsp of ghee and add the cashews and dry grapes separately. Roast them and keep aside.
Take another heavy bottomed pan and add wheat flour.
Roast the wheat flour in low flame with continuous stirring. So that the flour should get roasted evenly.
Roast them for 10 to 15 minutes, until the color changes and also you should get a nutty aroma.
Now add 4 tblsp of ghee and mix them well.
Then add the roasted dry fruits and mix them.
Cook them for 5 to 10 minutes with continuous stirring, so that the wheat flour should get cooked well.
Switch off the flame and powdered sugar and mix them well.
Let the panjiri get cool.

Tips - Panjiri
We can add any dry fruits like almonds, pista, walnuts, etc.,. Even we can skip them if not needed.
We should be very careful on roasting the wheat flour so that it should not get burnt or uncooked.
