Ingredients for Thai Coconut Soup
- Coconut Milk - 2 Cups
- Mushrooms - 1 Cup
- Ginger Paste- 2 tblsp
- Stalk Lemon Grass - 1
- Red Curry Paste - 2 tsp
- Chicken / Vegetable broth - 4 Cups
- Fish Sauce - 3 tblsp
- Lime Juice - 2 tblsp
- Basil Leaves - 1/4 Cup
- Fresh Cilantro - 1/4 Cup
- Brown Sugar - 1 tsp
- Salt - As Needed
Preparation of Thai Coconut Soup
Take a pan and heat a tsp of butter or oil.
Add ginger, stalk lemon grass and red curry paste. Saute them for 1 minute.
Then pour the chicken broth and stir them continuously.
Add chopped mushrooms, fish sauce and sugar. Mix them well. Let them boil for 15 minutes in low flame.
Add coconut milk also salt and stir them till the mushrooms get soft.
Let them boil for 5 to 10 minutes.
Finally add basil leaves and lime juice Mix them and turn off the flame.
Transfer to a soup bowl and garnish with cilantro.
The best Thai "Coconut Soup" is ready to be served hot.
