Ingredients for Pumpkin Soup
- Pumpkin - 1/2 kg
- Onion - 1
- Cumin Powder - 2 tsp
- Garlic - 1
- Vegetable Stock - 4 Cups
- Olive Oil
- Fresh Yogurt
Preparation of Pumpkin Soup Recipe
Chop the washed pumpkin and let it boil until pumpkin becomes soft.
Take a pan and heat 1 tsp of olive oil.
Add chopped garlic and let it saute for 30 sec.
Now add chopped onions and saute them well until onion turn translucent.
Smash the boiled pumpkin and add them to the pan.
Saute them for 3 to 5 minutes.
Now add the vegetable stock. Season with pepper and salt.
Mix them and let it boil for 10 to 15 minutes.
Turn of the flame and pour the hot soup to a serving bowl.
Add bread pieces and garnish with fresh yogurt.
A hot and healthy "Pumpkin Soup" is ready for serving.
Tips - Pumpkin Soup Recipe
While serving sprinkle some pumpkin seeds.
We can also use chopped parsley or coriander leaves for garnishing.
