Ingredients for Creamy Cucumber Soup
- Cucumbers - 4 Cups (Sliced)
- Small onion - 1
- Garlic Cloves - 2
- Vegetable Broth - 2 Cups
- Yogurt - 1/2 Cup
- Avocado - 1
- Lime Juice - 1 tblsp
- Parsley - 1/4 Cup
- Black Pepper Powder - As Needed
- Salt - As Needed
- Olive Oil
- Cayenne Pepper - A Pinch
Preparation of Creamy Cucumber Soup Recipe
Take a saucepan and heat oil.
Add chopped garlic and onion. Saute them for 2 to 3 minutes.
Now add 3 3/4 cups of sliced cucumber, vegetable broth, black pepper, cayenne pepper and salt.
In low flame cook them for 5 to 8 minutes until the cucumber becomes soft.
Transfer to a bowl. Mix lime juice and let it cool.
Now blend the cucumber mixture to a smooth paste.
Pour to a serving bowl and add fresh yogurt.
Add the remaining cucumber slices and mix them.
Garnish with chopped fresh parsley and diced avocado.
