Carrot Soup

Ingredients for Carrot Soup

  • Carrots - 1/2 kg
  • Onions - 2
  • Tomatoes - 2 to 3
  • Garlic Cloves - 2
  • Red Chilli - 1
  • Chilli Flakes - 1 tsp
  • Vegetable Stock - 500 ml
  • Fresh Coriander - 1 Bunch
  • Balsamic Vinegar - 2 tsp
  • Sugar - 1 tsp
  • HP sauce - 1 tblsp
  • Worcestershire sauce - 1 tblsp
  • Black Pepper Powder
  • Salt - As Needed
  • Olive Oil - 1 tblsp

Preparation of Chinese Carrot Soup Recipe

Take a pan and heat oil. Add chopped onions and saute them well until it turn golden brown.

Add chopped carrots, garlic and chillies. Saute them again for 5 to 8 minutes.

Now add the tomato pulps and mix them well.

Add vegetable stoke, half bunch of coriander, balsamic vinegar, HP sauce, Worcestershire sauce and sugar. Mix them and allow it to boil on low flame.

Add salt and black pepper powder. Let them boil for 30 minutes.

After 30 minutes turn off the flame and let them cool.

Blend the carrot mixture to a smooth paste.

Take a sauce pan add the ground mixture and heat them for some more minutes.

Before turning off the flame add remaining chopped coriander and fresh cream.

Transfer the hot carrot soup to a serving bowl. Garnish with coriander leaves and fresh cream.

A healthy and tasty Chinese style "Carrot Soup" with coriander is ready.

Tips - Carrot Soup Recipe

We can also use parsley to garnish soup.

Instead of cream we can also add fresh and thick yogurt.
