Ingredients for Spicy Chettinad Egg Gravy
- Eggs - 5 to 6
- Onions – 2 (Finely chopped)
- Tomato - 2 (Finely chopped)
- Dry Red Chillis – 4 to 5
- Garlic and Ginger Paste - 1 tsp
- Cumin Seeds – 1/2 tsp
- Cinnamon Sticks - 1 to 2
- Cloves - 4 to 5
- Coriander seeds - 1/4 tsp
- Fennel seeds - 1/4 tsp
- Black Pepper - 1/4 tsp
- Mustard seeds and Urud dal - As Needed
- Coriander powder - 1 and 1/2 tsp
- Turmeric powder - 1/4 tsp
- Chilli powder - 1/2 to 1 tsp
- Garam masala - 1/4 tsp
- Curry Leaves
- Coriander Leaves - As Needed
- Oil and Salt - Needed
Preparation of Spicy Chettinad Egg Gravy Recipe
Boil the eggs and peel them.
Make a slight cut on the boiled eggs and keep them aside.
Heat a pan and add Cloves, Cinnamon Sticks, Dry Red Chillis, Black pepper, Cumin seeds, Fennel seeds, Coriander seeds and roast them well till the raw smell goes away.
Allow the roasted items to cool and grind them as smooth paste.
Grind the tomatoes and keep aside.
Heat a table spoon of oil and add mustard seeds, Urud dal and Fennel seeds.
Then add curry leaves allow them to get fried well.
Now, add the chopped onions and saute them till the onions turns golden brown.
Add the ginger garlic paste and saute them.
Now add the grounded tomatoes and fry them till the raw smell disappears.
Then add the grounded masala and all the powders one by one(turmeric powder, Coriander powder and Garam masala).Mix them well.
Once the masala cooks well add 1 to 2 cups of water and allow it to boil.
Once the gravy turn thick add the boiled eggs to them and mix them well.Wait till the masala goes well into the eggs.
Garnish with chopped coriander leaves
Finally, our traditional spicy "Egg Gravy" are ready to served.
Tips - Spicy Chettinad Egg Curry
We can also cut the boiled eggs into 2 so that the masala mixes well with eggs.
We can fry the boiled eggs in a pan with a tsp of red chilli powder for more spicy egg masala.
