Ingredients for Plum Cake ( Christmas Cake )
- Maida - 300 gms
- Sugar - 200 gms
- Baking powder - 15 gms
- Vanilla sugar - 10 gms
- Butter - 250 gms
- Sugar - 3/4 Cup
- Salt - 1/8 tsp
- Eggs - 4
- Cashews - 1/2 Cup
- Kismis - 1/2 Cup
- Candied fruits ( Orange and Lemon peel) - 2 Cups
- Cinnamon - 5 nos
- Cardamom - 5 nos
- Cloves - 5 nos
- Greased Baking Tin
Preparation of Plum Cake ( Christmas Cake )
First heat a pan and add 3 tsp of sugar.Stir it continuously till it melts.
If the sugar melts completely and turns to brown, add 4 tsp of water.
Turn off the flame if the sugar mixture turns into thick syrup (caramel) and keep it aside.
Take the spices like Cinnamon, Cloves, Cardamom and grind them to a fine powder and keep it aside.
Melt the butter in a microwave.
When the butter melts completely add 200 gms of sugar and beat it well.
Then add vanilla sugar or 2 drops of vanilla essence and mix them well.
Now, add 4 eggs and beat them well.
Add baking powder and maida and beat them well.
Add the caramel(Sugar syrup we made earlier) and mix them well.
Now, add the spices powder to the mixture and again beat them well.
Finally add all the dried fruits and chopped Cashews and mix them slightly.
Pre-heat the oven for 10 minutes at 180 degree.
Pour the cake mixture to a baking tin and place some Cashews and dry fruits for decoration.
Bake the cake for 1 hour at 180 degree.
Let the cake gets cooled for a day.

Tips - Plum Cake ( Christmas Cake )
If needed apply fresh cream and chopped chocolates on the baked cake before serving.
We can also use chopped almonds and strawberry for garnishing.
Keep the cake in a clean air tight container so that we can store the cake for 2 weeks.
